I have read a few times that a UK driving licence is suficient to drive a bike uo to 125cc can anyone confirm this?

Definitely not, unless that licence states that you can drive a bike. Even then, to be legal, you should also have an International licence.

It is a requirement however to ensure insurance cover if you are going to rent a scooter etc here (or many other countries)..I have a full bike licence & I make sure I am covered by my UK 'long-stay' insurance to ride my 125 here..many insurance companies will not cover you on two wheels now without a full bike licence

I would say it's not enough. You will have to get an international licence (valid for Thailand). Insurance is another matter though.
