As a lifelong fan of chip shop chips I fear my own taste might be at odds with many others. When I go to the UK I like nothing more than my favourite vegan takeaway meal. A large portion of chips and a pea fritter. It is not only vegans that are aghast at my tastes. I like what could only be termed the familiar 'soggy' chips that you would get at most fish and chip shops. Lots of salt and vinegar too so very unhealthy.
Many years ago a family member and also a friend ran a chip shop and while I cannot recall the exact method of preparation I know that the potatoes spent some time soaking in water which may have been partly to keep a suitable stock for the evenings frying without having to prepare more.
I will agree wholeheartedly that frozen chips do not rate compared to 'proper' chips be they mine or others preferences. And woe betide those from across the pond who have corrupted the meaning of the word chip let alone the spelling of Ketchup.

I enjoy crisp chips and soggy chips. Even straw fries with the right meal.

But there's nothing better than an 11.30 pm bag of blisteringly hot soggy chips, salt with vinegar soaking out through the bottom of the paper, on a chilly walk home from the pub.

We went to the soft opening of the Tipsy Baker this evening. I was delighted to see real wedges on the menu - they had draught Guinness as well :D .

Talking of CHIPS (Before the yuppies/wokes decided they should be called/labelled 'French Fries'}..Who remembers the tatty, junk-filled place that was the opposite side of the small Soi where Buff Bills used to be (the site became Burger King)..
Well at midnight we'd send a coupla girls out of our bar for a BOX of chips..I forget the price, but within half an hour the pair would be back at the bar with a foil-lined shoe-box FULL of hot chips! Maybe that's partly the reason our girls were never slim..? 555.

Remember it well, even stayed up that small soi for a while in 1990 when I first moved to Hua Hin. Food was good and yes, proper chips. A few mozzies hiding amongst the junk too.

There was a time I'd have needed a lot more chips, but since my op, that was more than enough. My wife ordered a small steak and chips, and she had a much larger portion. I can assure you, the steak tasted much nicer than it looks in the photo.
