Won't help, we have 2.5 rai of coconuts and were told we need "more than 40 trees" to be considered a plantation. :guns:

Will look into bananas though, or papaya, both easy to grow.

Plant dwarf coconut saplings between the existing trees. Do they have to be fully grown to count?

Yep, a pal here suggested just that - if the saplings are less than the tax that's what we (and probably millions of others) will do.

My understanding is that this Land and Building Tax is applicable to a condominium unit even if it is ones primary residence and not let or leased. If so, that is a change from the original concept of the tax which was intended to target properties or land from which profit/income was earned.
