There are many. Saw this one today which I thought was quite mind-boggling. The illusion, apparently, isn't due to what what the guy in the vid days, but rather something called the opponent-process theory which massimo describes.
Cool brain trickery though.

I tried this and it's really weird. Stare at it, take the colours away and the flamingo is pink and the parrot green.
Initially thought "Nah, they just swapped the colours." but watched it without the 'stare' and the colours where actually wiped out. The only possible answer is just what it tried to prove. i.e. your brain sorted it.
