since we're on egg tips....

peeling a hard boiled egg, place the egg on palm of hand flip it over onto the counter hard and in one movement roll it through 360 degrees. The shell comes away in a one-er (a cracked one-er, but a one-er none the less). Just try and flip and roll in one swift (and firm) movement. It doesn't damage the hard boiled egg at all. Will be a hellish mess though if your egg isn't hard boiled.

if like me you can't seperate the yolk from the white easily with the normal method of split in two halves and pour the yolk from one to the other, letting the white seep out.. then just crack the egg onto a plate, get a clean and empty water bottle , squeeze the water bottle directly above the yolk and the vacuum sucks the yolk up into the bottle, while leaving the white on the plate.

you can also just crack the egg then pour the whole thing onto your hand and let the whites drip through your fingers while the yolk stays in your hand.

Yes, I need practice with hard boiled eggs. My daughter likes deviled eggs and by the time I get finished it's usually a disaster, mainly because the shell sticks to the white when peeling and breaks it apart.

I've read somewhere either soak the hardboiled egg in cold water, or don't soak?....to get the egg white to release from the shell. I'm sure other methods as well. Pete :cheers:

Eggs are embryos, after being refrigerated they are dead so need to stay refrigerated.

No, after eggs are refrigerated, it is important they stay that way. Maintaining a consistent, cool temperature is critical to safety. A cold egg left out at room temperature can sweat, facilitating bacteria growth. Refrigerated eggs should not be left out more than two hours before re-refrigeration.

After several disasters, I've found peeling a hard boiled egg in a bowl of water (peel the egg underwater), it's worked every time.

That is not contradictory info, it is additional info. A hen does not set on eggs until there are a lot of them in the nest and keeps them fresh until then by turning them every day. But a refrigerated egg will not hatch, it is dead, and dead meat (or embryo) does not keep very long if no refrigeration.

Also, back to what Nerius said - Right - those long distance eggs are OK in recipes but not so great to fry for breakfast. So we ate lots of pancakes and waffles. For me, I also prefer breakfast eggs that do not spread over the whole bottom of the pan when cracked open - like most of them do here.

In Australia almost all the supermarkets stocked an egg substitute called “Egg Like” that was probably a combination of corn starch and gelatin so we quit bothering about long distance eggs but did get long shelf life by inverting them every day. Easy to do by just inverting the carton, The old cardboard cartons did protect from drying out much better than the new plastic ones so when able to get them we kept those and re-used them as long as they would hold together. Health nuts would call that another bacteria no no but we are almost still alive

reporting back on your spinning egg tip, it works!! :thumb:

The straight outa the fridge egg span a few times and stopped. tested one after about 6 minutes and you could see it had a lot more spin but eventually died down, then after about 10minutes it span all over my work top and didn't look like it was gonna stop. Peeled them and they were perfectly hard boiled.

I will try your peeling tip next time. Sounds easier than my "whack and roll" peel.

Pete, while you may be having a hard time peeling your eggs, you can take comfort in the fact that you are getting very fresh eggs. The older the eggs are, the easier they are to peel. As you might remember, my MIL was selling fresh eggs a while back and they were almost impossible to peel. If stored for a week or two, then a lot easier. I found that if you boil them and then sit them in cold water, the colder the better, for a couple of minutes, they were a lot easier to peel.

Spot on Takiap in that the older the egg, the easier it is to peel. Putting them in cold water for a while serves two purposes. As well as being supposedly easier to peel, it prevents the yolk the blue/green tinge around the yolk, although it's quite harmless.

I never knew that about the difficulty of peeling relating to freshness! Might have to stop swearing at my boiled eggs now. :)

Egg price dip to be addressed

The Commerce Ministry is set to promote domestic egg consumption and beef up exports over the next two months to tackle the domestic egg price slump.

Whichai Phochanakij, director-general of the Internal Trade Department, said domestic egg production has exceeded demand, which stayed at 48 million eggs a day since the middle of the year, as farmers have ramped up raising layers to about 57 million compared with 52 million layers last year.

The glut is estimated to number roughly 70 million eggs.

Egg prices have fallen, with ex-farm prices fetching only 2.30 baht per egg, much lower than raisers' production cost, which averages 2.8 baht per egg.

Yet traders have still been found to sell eggs at four baht apiece.
"Egg raisers are suffering from the price slump, while consumers still have to consume eggs at relatively expensive prices. Traders or the middleman take a profit worth 1.70 baht per egg," said Mr Whichai.

He said the aid package includes a plan to accelerate egg exports to 30 million eggs over the next two months, a promotion campaign for consumers to consume more eggs, and the sale of eggs through 40,000 Thong Fah Pracha Rat shops nationwide at 20 baht for 10 eggs.

The ministry expects to sell 20 million eggs through the Thong Fah Pracha Rat shops and another 20 million eggs through Thong Fah Pracha Rat fairs to be held in 22 provinces nationwide.

In a related development, Somsak Kiatchailak, deputy permanent secretary for commerce, said spending by state welfare cardholders at Thong Fah Pracha Rat shops, both through electronic data capture machines and via the Thung Ngern (Moneybag) Pracha Rat app that allows welfare cardholders to make payments via mobile phone, amounted to about 50 billion baht.

The best-selling products include milled rice, packaged rice, and processed food such as shrimp paste, fish sauce, red onions, and fruit.

The Thong Fah Pracha Rat shops are part of a 41.9-billion-baht aid package approved by the cabinet last August, aimed at 11.7 million low-income earners -- some 5 million of whom live below the poverty line.

Apart from providing low-priced consumer goods, the package also includes allowances for rides on public buses and trains, as well as utility subsidies.

Does anyone know where the egg wholesaler on Soi 68 has gone. Just arrived and along with all the shops on that stretch is closed. Only the ice man still open.
Think it was Big Boy who used this place for him O eggs.

It's about 100 yards North of where it was on the opposite side of the road.
