Sausage
Should we talk about sausage? Not even close to an area of expertise for me, but there is a British expat mart near me that probably has a dozen varieties.
I know a good comment will be that regardless of the name of the sausage, the quality and taste depends upon the butcher who makes it. I think in Hua Hin, Hua Hin Ham & Bacon has a good reputation for quality sausage.
The place near me has names such as Lincolnshire, Cumberland, Yorkshire and something called Epicure breakfast sausage...among many others. Also sausage mixed with things like leeks, jalapeno etc.
I fancy the Yorkshire the best and I'll probably come to find that I like it so much because it has a huge fat content?! I don't care, it's good, very good.

I am very fussy about sausages. I certainly won't entertain the plastic crap many places serve as sausages. Yes, I am a fan of the Hua Hin Ham and Bacon sausages, and enjoy most of their varieties, although their chilli sausage (don't know the posh name) is a touch too spicy for me to enjoy. I guess my favourite is a good Cumberland sausage,

Possibly because I never looked sufficiently, but the sausages I have tried were not to my liking so I make my own. You need some specialist equipment and some spice/herb mixtures and then you’d good to experiment - a recent example

As an ex pat Brit i may well be in the minority but I don't miss the great Brit banger at all but I do enjoy a good Bratwurst now and then. Let's not forget that sausages are not exclusive to the UK. IMO much better available.

Saw in German TV some times ago. Many Brits love the German Bratwurst. Maybe someone did visit this place...

Being back in the UK, there's a huge range available across the board, but the LHG and I still make our own from time to time - certainly "Chinese Style" to MIL's recipe over Chinese New Year..... I love these (homemade, dried and then boiled before eating). So good...... and unhealthy!
I remember a restaurant many years ago in HH closer to Hin Lek Fai rather than town. I suspect it also disappeared years ago, but their homemade sausages (and Cocktails) were superb, a real "international flavour" - would love to find out if they're still around somewhere (this thread has reminded me of them again).

I like all sorts of sausages, cumberland being my favourite. A bonus if you can get it in a 'ring'.
However, for a good sandwich, Lorne sausage is excellent. I've found it's the same size as Aro sliced bread so fits perfectly along with a slice of cheese.

My all time favourite as a kid spending school holidays in Norway was pølse lumpe with a bottle of Solo orange (nearest to taste would be Orangina. Orgasmic!!

We did find Lorne sausage at Nanny's, which was OK, but far from the best. It did a job, and made a nice change.
Overall, I'm not a fan of Nanny's sausages but their burgers are superb. Of course, as always with this kind of thread, it's all down to personal taste.

TBH you don't really need specialist equipment. Whilst I admit I have a dedicated sausage-making-machine that I use myself, the LHG simply uses funnels (to feed skins) and a mincer when required. She'll make her own seasoning or occasionally we'll use bought-in seasoning. Best sausages I have ever eaten, have always beem prepared by a good local butcher. If you can find one. I have one now who always makes lovely hot spicy sausages.

I use a Kenwood Chef that has a Mincer and sausage filling attachment - I brought it with me when I retired from working in the UAE, but you can buy sausage filling machines here. I buy the skins from “the Moo” shop in Hua Hin - one bag has an incredible amount but I freeze them in small batches and take them out as needed. The seasoning mix I use I buy from the UK (https://sausagemaking.org/acatalog) either when I visit or when somebody is coming out to visit me and just buy the breadcrumbs from Makro
