Oh trust me, the octopus is being delivered fresh and cleaned - along with a good sized portion of "Fruits de Mer" :D

Whether or not I can deliver on the octopus with regards to cooking and presentation is a different matter!! :shock:

When I lived in Greece, when they caught the octopus, they threw it 20 times onto a rock, with great force, tenderising it. They then fried in batter it was the best octopus I have ever tasted. For a dip wife uses a sweet chilli sauce as a dip.
Woke up this morning breathing that's a good start to the day.

Now that this thread has been revived, anyone got a good hummus recipe that can be made with locally sourced ingredients? (yeah, I know there is Google but just wondered if anyone has made it here)

Never tried making it and haven't eaten it for many years.

1 15 oz. can of garbanzo beans
2 ½ tablespoons extra virgin olive oil
1 ½ teaspoons sea salt
1 ½ medium lemons’ juice
½ cup tahini
2-3 cloves garlic, sliced thin
Water as needed

Place all the ingredients in a food processor and process on high. Once the ingredients begin to mash and mix and the processor begins to slow, start adding water a tablespoon at a time until you reach a smooth consistency.

Serve with a bit of olive oil in the middle & a small bowl of crushed pistachios, roasted sesame seeds and black pepper.

It's a bit of a coincidence that you mention this because I eat hummus all the time and just last week a colleague told me that you can make your own. I've got as far as buying a blender and some cans of chickpeas but I haven't found Tahini yet which apparently is traditionally in it.
Apparently there are alternatives and I'm going to experiment over the weekend, I'll let you know how I get on and
I don't plan on using anything that isn't readily available in a normal supermarket.

I'd never heard of it before either and you don't find it in a normal supermarket in Europe, apparently it's made out of sesame seeds and I'm either going to use those or sesame oil. It sounds like something you'd find in Tehran rather than Thailand!

Tahini is (apparently) just sesame seeds toasted and ground with olive oil into a paste.

Lazada has tahini but you can make your own, I did a few years back but haven't since so can't remember the recipe but I'm sure google does
