In contrast to the thread "British food" I want to open this thread about delicious food from the EU (Continent).

In my humble opinion, French and Italian cuisine is one of the best you can get on your plate.

I also know some German or Swiss dishes, and there are Scandinavians members here as well - so I won't limit the title to French and Italian.

Whenever dishes are mentioned in this thread, please mention the country of origin if known. Also a link to a recipe of this dish would be helpful (if it does not conflict with the forum rules).

Bouillabaisse marseillaise

This fish soup comes from Marseille France.

For me the best fish soup ever tasted a real treat. Different kinds of fish from the Mediterranean Sea, boiling fish for eating, others fall apart during cooking and thus produce this unique broth with a wonderful light consistency.

The perfume with Noilly Prat which is also produced in this area gives the dish a special touch.

The only negative thing about this dish is the fact that if you don't live on the Mediterranean coast it is difficult to get at the fresh Mediterranean fish. I live in Germany on the French border, and from time to time I have been lucky enough to get the necessary fish in Strasbourg in very good quality.

So if any of you ever travel to the EU again, especially to the French Mediterranean coast, try to taste this wonderful dish.

Fillet of beef Wellington

The Filet Wellington is a meat dish allegedly created by Swiss chef Charles Senn on the occasion of the Zurich International Culinary Exhibition (ZIKA) in 1930. This is contradicted by the fact that several German-language cookbooks already contained recipes for this dish around 1900. It is rather a variation of the older French dish Filet de boeuf en croute


An incredible smell when the knife cuts through the puff pastry and the tender filet for the first time.

The cooking degree of the fillet is of crucial importance. I like it juicy and pink with a bloody core. Sorry, but well done fried I refuse. If the animal had to give its life, the meat must not be fried dead. If you can't see blood in beef steak/fillet, you should eat braised roast beef - at least that's my opinion.

I like to eat fries dauphine with it. Homemade, of course!

Since I live here, I really don't miss a bouillabaisse, I love Tom Yam Kung or Thale.

Spaghetti Carbonara

Clear Italy


A very good example of how a very simple dish can be totally messed up.
Sticky white slop as sauce, and raped with boiled ham.

There will of course be variations, and some is a matter of faith, like with or without garlic.
Buying sliced cheese is actually nogo for me. Buy a piece of pecorino or parmesan, and grate it immediately before eating, but only as much as you want to use now.

But here I have a very simple, puristic recipe, very easy to recook.
Simply delicious!

Since I live here, I really don't miss a bouillabaisse, I love Tom Yam Kung or Thale.
I also like to eat Tom Yang Gung in Thailand very much, but with respect, the only thing the two have in common is that there is something from the sea in it.
They are completely different taste experiences.

Agree, love a good carbonara. My daughter-in-law's version is delicious, although I've no idea how authentic it is. However, as with most food, if you like it, it's good.

There are many really delicious European dishes, I'll name a few:
From Southern Germany & Austria the fresh trout fried with garlic is superb. In the Alsace the Sauerkraut, Foie Gras and the regional wines are very special. From Spain I love a roasted goats leg and a good Paella. The Belgian & French kitchens are very much alike, both extremely good and with a large variety of dishes. The cheaper restaurants in France are better than Belgium but the middle class restaurants in Belgium are better. For top class restaurants they are the same in every country (as judged by Michelin). Germany has its Schweinhaxe and vaious types of meatloaf, all delicious. Switzerland has Rosti and a variety of Schnitzels of which Zurich style is my favourite. You have the Netherlands where you can eat exceptional soups (Thick Pea "Ertwen" and Brown Bean), smoked eel (very nice) and, of course, raw herring with raw onion snippers (when that is new in June it is not to be missed). Scandinavia has smörbrod (open sandwiches) the best probably coming from Denmark & Norway. Although this may make some Scandinavians angry I have the feeling that most other Scandinavian food is there own take on food originating from other countries (meat balls, hamburgers, hotdogs, etc.). I am very partial to a Greek Moussaka and many of the other meat dishes. I do like good Italian food. Pizza's & Pasta's are served everywhere but if I go out for a really good meal then I go to a top Italian restaurant where I will eat steak or fish. Italy & France are the only two countries that I have been where you can go into a middle class restaurant and only the chef's menu of the day is served. I have eaten many delicious meals that were a "surprise". Once,outside Paris, I had a meal consisting of 4 courses all using Camembert. In another restaurant it was Strawberry season and I got 4 courses all made with strawberries. In Italy there are many restaurants where you get 8 or 9 courses without knowing what is coming next. Every country also has its street food but I won't go into that here. I have probably forgotton many things but this is a start.

You absolute right, the own taste is important.

The problem is often that many dishes are quasi standardized (applies in any case to DACH and other countries like France).
A very good example is the "Wiener Schnitzel". It is very clearly defined that the Wiener Schnitzel must be prepared from veal.

But if pork or turkey meat is used for it, it may not be called Wiener Schnitzel in a restaurant. If it is prepared in DACH made from pork, then the name "Schnitzel Wiener Art" is used.

At home you can of course name dishes as you like. :thumb:

I’ve noticed that the Thais seem to love carbonara and have adopted it, even so much as making it available in their lineup of ready-to-eat 7-11 meals. I do love a good carbonara myself.

Have been very fortunate to sample many (local) dishes from around the world whilst travelling for work and/or pleasure.

Italian - some superb food! Just to add to the Spaghetti Carbonara comments - I do love this dish when done properly, but have certainly sampled some disasters (the majority being in China and Asia). Pasta dishes simply too many to mention.

Spanish - I love the seafood and so obviously a favourite dish is Seafood Paella (the other version being with rabbit and/or chicken). The recipe is constantly abused however - my pet hate being the addition of Chorizo (a spicy Spanish sausage).
Other Spanish dishes I love include Gazpacho Soup (don't send it back for being cold), Jamón, a cold salted cured pork, very thinly sliced. An absolute favorite as a snack with a cold beer watching life go by!! The Tapas again too many to mention.

French - Escargots (in Garlic & Parsley Butter) - The LHG didn't speak to me for a day after I suggested trying them!! Boeuf Bourguignon, Moules Marinières (probably above all (French) dishes actually......)..... I would also say Steak Tatare, but I believe it is actually Russian in origin (good history question)! :thumb:
