I agree 110%, which is why I was so shocked to see what was on sale a few days ago. Here's hoping it was a temporary glitch.

But were they wet or dry - wet are totally useless for baking and roasting unless you prefer a soft oustide and wet inside potato ?

My wife never has a problem roasting Thai potatoes just the way we like them, but she is an incredible cook. Actually, I guess that should be potatoes bought in Thailand, because invariably there is a notice saying imported.

I've never had good results trying to roast potatoes in Thailand and yet everywhere else I have no problem, so I can only put it down to the potatoes as opposed to the cook!! As others have said, the potatoes have a higher water content that obviously doesn't agree with roasting, even though I par-boil them first, same as I always do.

When Makro first opened, the branch near Pattaya used to display and sort their spuds by country. true! The box would be labeled; Idaho, Maine, Ireland, Holland, Canada so on and so forth. If I recall correctly there were 10-12 countries and US States. Unfortunately the practice seems to have stopped....management change I guess. Pete

You could try par-boiling them letting the spuds cool on a rack.

This way as they cool moisture is released through the steam.

Mrs BB manages the same excellent standards of roaster wherever,

On a brighter side, and back to the OP, we were at Makro again today, and the standard was almost back to their best. Thankfully, only a temporary glitch. :D

I use a convection oven (its a large glass bowl with a heating element in the top....its brilliant for roasting/warming up. I put a skewer through the middle, In foil for around 1hr at 175" . Often rub the spud in salty butter or olive oil.

I have not come across a DRY potato this year from either Makro or a Market. All potatoes are wet and do not roast or bake in the oven at all well. A dry flowery potato is crisp on the outside and flowery inside.

If any of you recommending these wet potatoes can achieve the above then please - certainly in foil will not crisp to the required spec- tell us how you achieve it.

Going potatoes

Potato chip lovers can be forgiven for thinking that what they are snacking on is imported. The fact is, the potatoes to make the chips come mostly from farms right here in Thailand. — Chumporn Sangvilert

I have found that the potatoes from Chang Mai - at main market off Phetkasim Rd are the best - called dirty potatioes.
