How soon can you go and get a 30day extension of your 30 day visa exempt entry? eg can it only be done within the last 7 days of permission and not before? I'm the sort who would rather just get it sorted ASAP but perhaps there is a specified time window?

It's normally within 7 days. That's not to say that things can't be flexible especially if you have a good reason (travel timing etc). But expect 7 days.
