Yes, I've also often wondered what fish they use here for fish and chips. In South Africa we use mainly hake and snoek. In fact all Walmart's and Costco's "wild caught hake is imported from South Africa. Hake is really plentiful in SA and really tastes no different to regular cod.

I was told that John Dory is the popular choice of fish and used more often than not in F&C establishments.

I had F & C recently and the fish was mushy and tasteless-- there is a trick.
Frozen fish must be defrosted slowly. Ideally take from freezer and place in t fridge overnight, then out of the fridge for several hours.
The worst way to do it is--Freezer to Microwave.
The fish used here is (frozen) Dory - we used it in our previous restaurant.
It makes very good F&C and is inexpensive to buy (Makro) - the flesh is white and flaky but much smaller flakes than cod.
It's very tasty and versatile in cooking because it has good, firm flesh.
It's not the same John Dory as we know in the west, because that is a very expensive fish and tends to be quite small, whereas the Dory fillets can be pretty big. The flesh of John Dory also has a very different texture.
The place(s) (three different locations) I used to go for fish n chips before the owner passed away a while back advertised Cod and several other varieties of fish including local snapper. I tried most of them and they were all good but I liked the Cod best.
My brain is like an Internet browser; 12 tabs are open and 5 of them are not responding, there's a GIF playing in an endless loop,... and where is that annoying music coming from?

^ Yes Richard, his name was Richard too I believe and I'm sure you knew him well. Still the best fish 'n chips I've had in Hua Hin when he was around to oversee the preparation.

All you see is the noodle stall at the front, and 4 'unoccupied' Salas (whenever I've walked past) in the space behind. The bar signs are still in place in front of the old bar.
I'm not normally one to eat fish and chips in Thailand but the other day I was sat at my neighbours house when his wife got some delivered for us and it was really rather good, on enquiring, apparently it came from the Peppers restaurant at the driving range on the Palau Lau road.
